The food, service, people, ambiance and value for money are the reasons why diners frequent a place located in the vivacious Manila Bay are and overlooking the world-famous sunset on Roxas Boulevard called "Latitude" of the Traders Hotel Manila-the most modern cafe in Manila's dining scene.

Executive Chef Edwin Santos brings his 25 years of culinary mastery to Latitude. Santoshoned his skills as an apprentice in various international hotel chains. He started as an apprentice in a five star hotel in Makati in 1982 and worked his way up to chef de partie. He joined Makati Shangri-la in 1993 and became the banquet sous chef in 1999. Because of his popularity, Santos was lured away in 2000 by another five-star hotel where he worked for four years but in 2004, Makati Shangri-la hired him back and he became part of the team that opened Circles. It was in December of 2006 that Santos was asked to head Latitude, which opened in July this year.

With seven cooks and a total of 22 staff members, Santos created a buffet of 14 appetizing dishes for Latitude, which changes daily. The menu course is composed of International Western, Japanese and other Asian cuisines using seasonal, local produce and superiors ingredients enhanced by Santo's classic culinary expertise. Pampered by the Traders brand of service, guests will enjoy tableside presentations of a carver, soups, salads and cheeses as well as international and native desserts.

Latitude can seat 150 guests in very cozy and contemporary furnishings contructed from radiant, warm woods and orange subdued fabrics, complimented with mood lighting, which was designed by the talented and very promising interior designer, Kaye Fordelon Tagle. Intimate, high backed booth seating adds to the noctural mood of the space. The restaurant also offers a semi-private area for special occasions and intimate events.
