Restaurant come from his travels abroad, visits to other restaurants and research, resulting in a multifarious mix of influence. The biggest challenge for Mr. Gallego when he was planning the menu for Las Paellas, it was to get random samples of different cultures seafood ideas and to pull them together as a whole.
